Ingredients
For 3 people
3 chicken legs
White mushrooms, 17oz (500g)
1 red pepper
1 green pepper
4 tomatoes
2 courgettes
Tomato puree, 2oz (70g)
1 onion
Herbes de Provence
Salt
Black pepper
Olive oil
Recipe
In a skillet, pour oil and heat. Once hot, brown the chicken legs (3-4minutes on each side). Set aside.
In the skillet, add a little oil and sauté the chopped onion, garlic and bell peppers. Cook for a few minutes.
Add courgettes, sauté 2-3minutes.
Add the tomatoes, mushrooms and herb de Provence. Mix.
Add the tomato paste, salt and pepper. Simmer covered and over high heat for 5 minutes.
Lower the heat to low and add the chicken legs. Cook for about 30 minutes, turning chicken legs and stirring vegetables occasionally.
Serve hot.
