When you have strawberries, what’s better than strawberry pie?
Here is the recipe for strawberry pie

Ingredients
For 4 people:
Fresh strawberry, 1 lb (500g)
Flour, 15 oz (430g)
Softened butter, 2 oz (62g)
1 pinch of salt
3 tablespoons sugar
Water, 2 oz (5cl)
Milk, 8 fl oz (25cl)
Eggs 2
Powdered sugar 2 oz (40g)
Recipe
Short pastry:
On the table, place 10oz of the flour and make a well.
Separate the egg white from the yolk.
Place the egg yolk, butter, salt and water in the middle of the well.
Knead quickly to incorporate all the ingredients.
Form a ball.
Wrap the ball in food foil and refrigerate for about 1 hour.
Spread the dough in a pie pan, prick and bake for about 30 minutes.
Once the dough is cooked, let it cool,
Pastry Cream:
Bring the milk to a boil.
In a saucepan, beat egg and sugar.
Add the flour and mix.
Pour in the hot milk. Mix
Return to low heat to thicken mixture while stirring about 5-10 minutes.
As soon as it starts to boil, remove from cooking.
Let cool a bit.
Once the custard is warm, pour over the bottom of the pie
The top of the pie:
Remove strawberry tails and cut strawberries in 2.
Place on top of pie
